Okay, so it is one of those days you feel like you should be in bed with a good book and a hot plate of food by your side but you know you won't be getting either soon. The next best thing is my imagination and my plans for the meal in my head to become a reality. Right now the meal in my head is okro soup soup and afang vegetable served piping hot with pounded yam or cassava fufu (akpu) I don't know the origin of this meal but as with most of my meals, I have my own version of it. Enjoy my recipe: This serves 2 people 1 cup of grated okro 1 cup afang vegetable half cup dried shrimps 2 medium pieces cow skin(kpomo) 4 pieces beef (or smoked fish) Yellow pepper (to taste) Crayfish (to taste) 1 tablespoon palm oil METHOD Wash beef thoroughly and set on fire to boil Wash and add kpomo (cut into small pieces)
Add salt and seasoning and allow to cook Wash afang vegetable thoroughly and put in a blender add crayfish and yellow pepper and blend well When meat is soft, add, washed shrimps and smoked fish as the case maybe Add palm oil and allow to boil together Add grated okro and blended mixture Allow to cook for 5-7 minutes serve hot with pounded yam or Fufu.
